Ultra-high-pressure homogenization (UHPH) is drawing renewed attention as a non-thermal method for processing fruit juice, according to a comprehensive review published in Discover Chemical Engineering. The review, authored by Lida Rahimi Araghi, Meghan M. Stewart, Rakesh Singh and Koushik Adhikari, synthesizes findings from the past decade on how the technology affects juice quality, safety and shelf life, and concludes that it is a promising alternative to conventional thermal pasteurization.

UHPH works by combining very high pressure with intense shear, cavitation and a controlled increase in temperature as the liquid is forced through the homogenization system. According to the review, this combination can inactivate microorganisms and deactivate enzymes while avoiding the negative effects that traditional heat treatments can have on juice. The authors frame the technology as a response to growing consumer demand for minimally processed, fresh-like juices that retain natural sensory and nutritional qualities such as flavor, color and bioactive compounds.

The review’s synthesis of the past decade of studies indicates that UHPH preserves essential juice qualities, maintains stability against sedimentation and color changes, and greatly extends shelf life. It also reports effects on physicochemical properties, microbial safety, sensory qualities and consumer acceptance, positioning the process as capable of producing safe, shelf-stable juices without the drawbacks associated with heating.

The authors are candid about the main barrier to wider adoption: high equipment costs remain a challenge. Even so, they argue that UHPH offers considerable potential for the fruit juice industry by enabling the production of minimally processed, additive-free juices aimed at health-conscious consumers. Beyond summarizing current applications, the review also offers theoretical insights intended to improve the technology itself, with the goal of enhancing product quality, safety and industrial scalability.

As an open-access review article, the paper consolidates existing research rather than presenting new experimental results, and its conclusions reflect the state of the published literature on UHPH in fruit juice processing.
