The aroma of Sichuan pepper, the spice behind the numbing sensation of Chinese cuisine, can measurably increase appetite, according to a study published in npj Science of Food. Researchers examined three types of essential oil from plants of the genus Zanthoxylum and found that smelling them enhanced self-reported appetite and, in a controlled eating test, raised total food intake by 15 to 19 percent among male participants, with the extra consumption skewed toward salty foods.

The human evidence came from two tiers. A larger cohort of 348 participants rated their appetite after aroma exposure, while a separate group of 78 participants ate ad libitum, meaning freely and without restriction, under the same conditions. Across these tests, the essential oil aromas enhanced general appetite and modulated sensory-specific appetite, the desire for particular categories of food rather than food in general. Notably, the intake effect appeared only in male participants in this study, and it was more pronounced among people who frequently consume Sichuan pepper. That pattern led the authors to describe a learned, cognitive pathway: repeated exposure to the aroma in the context of meals may condition a stronger appetite response over time.

Alongside the human data, the team ran experiments in mice, where inhalation of the essential oil significantly promoted acute food intake. This behavioral change tracked closely with shifts in mRNA expression of feeding-related neuropeptides in the hypothalamus. Exposure increased expression of MCH and orexin, two neuropeptides that stimulate feeding, and decreased expression of POMC, a neuropeptide associated with satiety. These molecular changes offer a plausible physiological route by which the aroma could drive eating behavior, though the findings in mice do not establish that the same hypothalamic mechanism operates in humans.

Chemical analysis of the essential oils identified five volatile compounds with appetite-enhancing activity: beta-phellandrene, linalool, ocimene, eucalyptol, and linalyl acetate. These molecules are candidates for the observed effects, although the study did not isolate each compound’s individual contribution in humans.

Taken together, the results support the idea that Sichuan pepper essential oil aroma promotes appetite through convergent pathways, one cognitive and shaped by familiarity, the other physiological and mediated by hypothalamic neuropeptide signaling. The authors frame reduced food intake as a key contributor to malnutrition, and olfactory stimulation with certain spice essential oils as a potential route to facilitate oral intake. However, the evidence base has clear limits: the increased food intake was observed in male participants only, and the neuropeptide findings come from mouse models. The work is published as an open-access article and, at the time of this report, is being shared as an early peer-reviewed version that will be replaced by the final Version of Record.
